When I first started researching today’s blog post topic, I had no idea that it would be so stinkin’ controversial! There are enough controversial topics out there without there being a HUGE one in the middle of a food storage blog, but there it was sitting right in front of me on my computer. It’s never been a point of contention in our family. This never goes on the table when we do some ‘grillin’ on the barbie’ to quote Michael Caine’s character in Dirty Rotten Scoundrels.
What controversy could be sitting in the middle of a food storage blog post? Just this……………..are ya ready?
I’ve shown you how to make ketchup. I’ve even shown you how to make mustard. There was never really any controversy over those things, right? But with mayo? Wow. The controversy is something along these lines. Does mayo belong on a hamburger? Uhuh………Yuck it up. Have a good laugh. And then go do a search on, “Do you put mayo on your hamburger?” You’ll find I’m right! There are people who are adamantly against it! “Mayo on a BURGER? That is the most disgusting thing I’ve ever heard of!” And there’s the opposite side, “I’d never eat a burger without mayo.” I’m sure this would be said with a nose raised in the air.
“Why,” you might ask, “All the fighting over mayo on burgers?” Because today, I’m going to teach you how to make mayonnaise.
Now to my shame, this is something I had put off doing myself for YEARS! Uhuh, I can you’re dying to know why, so I’ll fill you in. I was too intimidated! Really! I’ve read blog post after blog post as to how HARD making mayo is. I had read blog post after blog post on how to fix messed up attempts at making mayo, so I avoided it. I refused to try to make it.
But there’s nothing like writing a blog to get you to try things that you would never try otherwise! So in a determination of learning how to make this ridiculously hard condiment, I found out that mayo doesn’t have to be hard to make. If you know how to do it, it’s actually SO SIMPLE to make!!
Since I’m sure you’re dying to hear the secret of how to make really easy mayo. I’m going to tell you in two words – IMMERSION BLENDER! Yep. Those two beautiful words make easy mayo! You also need a wide mouth pint sized canning jar, but that would be eight words instead of two. Sounds a lot less stunning that way.
But I hear ya. “Alright, already! How DO I make ridiculously simple mayo?” Well, hold your horses, and I’ll tell you.
Homemade Mayonnaise
1 C + 2 T avocado oil – This is your best bet for both taste and quality of oil. I get mine at Costco.
large egg (Yep – the whole thing, not just the yolk)
1 tsp lemon juice
1 T Dijon mustard
1/4 tsp salt – I use pink Himalayan salt
Directions:
1.) Put all your ingredients in your mason jar. Set your immersion blender on the bottom of the jar and turn it on. Keep it on the bottom of the jar for 10 or so seconds. You’ll see the mayo start to emulsify and turn white.
2.) Once it starts to emulsify, start slowly moving the immersion blender up, down, and around slowly until the entire mixture looks like mayo!

In the picture on the right, you can see the mayo start to emulsify.
This third picture is what it looked like almost instantly after I started moving the immersion blender around. It was amazing! It took me all of 30 seconds to make. Really! It’s THAT simple!
