Quarantine Week 2 – And More Food Storage Recipes

So how was your first week in quarantine – assuming that you have hunkered down already?

Homeschooling?

Do you have kids who are now schooling from home?  For those of us who homeschool, this is still crazy!

(1) We miss our social situations just like people who send their kids to school.

Each week, besides church on Sunday, we have chess club on Tuesdays.  Bible study on Wednesday.  Oftentimes we spend time with friends on Thursdays.  Friday, we spend with my Mom.  That means that we’re missing out on our socialization.  This week, my kids and I had a day scheduled over at a friend’s house, and we are missing it.  My heart needs my time with my friend this week, and we’re missing it.

(2) School Continues….mostly, but it’s different

Despite the fact that our kids keep schooling just like usual, there are some changes that put a wrinkle in our day.

My two oldest children have graduated.  My 17-year-old daughter graduated about a year and a half ago, but she is so busy.  She makes breakfast for us daily.  She also does school with my youngest child, quilts, and is still studying extra chemistry and calculus.

My 17-year-old son just graduated from highschool just a month ago.  We gave him two weeks totally off, and then we went into quarantine!  If it wasn’t for the virus, he would be out applying to work at different places so that he’s earning money for a class in Piano Tuning.  So now, we’re asking ourselves how we can help him be ready for the class and for a business of piano tuning once we come out of this time of quarantine.

For my youngest, who is just finishing up first grade, he’s still learning to read, but with all the other kids otherwise occupied and since we are missing our social engagements which usually gives him something more during the day to do, he’s needed something to help him occupy his time.  I found out that Teach Your Moster to Read is on sale for $.99.  I bought that for him to both occupy his time and help move his reading along.

For my middle two kids, fortunately, it’s business as usual.

Church 

We ended up doing church using Zoom.  It’s definitely NOT the same.  I miss the hugs and the fellowship, but for the moment, it was the right decision.

Movie Night

So we’ve started watching through different movie series.  We started with Horatio Hornblower.  This a series of 8 movies starring Ioan Gruffud (Fantastic Four).  It’s about a young man who chooses a career in the Navy at the beginning of the 1800’s.

We’ve since moved on to the Hobbit series.  When it comes to the Hobbit and The Lord of the Rings, we only purchase the extended versions.  We’ll take one an evening and enjoy time together as a family.

Food Storage Meals

Our food situation has been fine overall during all of this time.  We’re used to eating at home, so that’s nothing new.  I don’t often cook completely from scratch anymore, but I am completely capable of it.

My failures

So I wanted to make something special for my kids.  They love homemade cinnamon rolls, so I wanted to make them some.  The problem is that one of my children has a gluten issue.  Overall though, we’re fine because I have gluten-free flour.  Well, I discovered that 1 to 1 gluten-free flour does NOT work with yeasted breads.

So I tried making homemade cinnamon rolls using gluten-free flour.  Well, it didn’t work – AT ALL, but I wasn’t about to waste the dough.  So I took some palm shortening and heated it up and fried some of the dough balls in the shortening.  Afterward, I tossed them in a cinnamon/sugar mix, and it made for great “doughnut holes” for breakfast instead.  Next week though I’m going to make actual cinnamon rolls and figure something fun out for my littlest one.

 

Food Storage Recipe –

Potato, Bacon, Corn Chowder – Serves 7

8 potatoes cleaned and cubed

3 cans corn

8 pieces bacon cubed (I buy precooked shelf-stable bacon)

2 Quarts chicken broth or bouillon

1 tsp garlic powder

1 tsp onion powder

8 oz Cream Cheese

Directions:

Clean and cubed the potatoes.  Cube the bacon.  Drain the corn.  Add all of them to a pot or crockpot.  Cover with the chicken broth.  Add the garlic powder and onion powder.  About 10 minutes before serving, cube the cream cheese and stir to incorporate.
