Quarantine Menu Week 3 & What We’ve Been Up To

It’s hard to believe that this is our third menu for the quarantine.  This week’s gone fast, but we’ve had some activity at home this week which has helped it move along faster.

So on Tuesday of this week, we knew we were getting a delivery of compost.  We were supposed to buy landscaping bricks to frame out a new area for an herb garden.  Since we weren’t heading out to a store to buy bricks, I wanted to find another way to frame it out using only what we had access to.

We have a ravine behind our house and there is an area of the ravine that has a rock slide.  On Monday, my kids made several trips down to the rockslide and framed out the area that we’re using for our herb garden.  Tuesday, we had the compost delivered and we mixed with our existing garden soil to improve the quality of the soil for our garden spaces.

Garden Seed Order  Week 3 Quarantine Menu & How We Spent the Week

So I placed an order for heirloom seeds from Baker Creek Heirloom Seeds.  Apparently I was later than I realized though because they were out of a lot of seeds.  I ended up placing a second order from Gurneys.com to get more of the seeds that I was looking for.  Both websites said that they are inundated with seed orders, so it will take a while for it to ship.

Grocery Delivery Order

I tried something new this week.  I had been wanting to fill out some of our refrigerated items – mostly dairy items – from Costco.  We were also down to very few fresh fruits and veggies.  I placed an order at Costco through Instacart.  Even though I’ve read that they were going on strike, I got my order.  Yes, it cost me about $100 more than I would have normally spent, but I didn’t have to go to the store.

I had everything dropped off in my garage on and in front of a table that I set up with the garage door open.  After the person dropped off my groceries, the fun began.  I wiped down everything that I ordered with disinfecting wipes – very thoroughly and transferred items to other containers and spent over an hour at my sink washing my produce.

I found this video this week that shows how (as safely as possible) to get and disinfect your groceries and how to get takeout safely.  It was so incredibly helpful!

Continuing Book 2

One of the things that I’ve been spending time on this week is working on my next book.  It’s going to be on the different layers of preparedness with what you need to be prepared for each layer.  I’ve finished the intro and chapter one this week.  I start working on chapter 2 tomorrow.

We are getting to the place where at least half of what we’re eating is made from scratch.  Granted, we did buy muffins from Costco (one of our favorite breakfast treats), boxed gluten-free macaroni and cheese, and tortillas.

Friday’s Menu

Breakfast – Muffins

Lunch – Pizza

Dinner – Steak and mushrooms for my husband and I and hotdogs for my kids.  It’s our weekly date night.

Saturday’s Menu

Breakfast – Muffins

Lunch – Get Your Own

Dinner – Bacon, Potato, Corn Chowder

Sunday’s Menu

Breakfast – Homemade Cinnamon Rolls – I’m going to try this new recipe.  It’s gluten-free.

Lunch – Meatballs and French fries.

Dinner – Spam and Beans

Monday’s Menu

Breakfast – Oatmeal

Lunch – Mac and cheese with chicken

Dinner – Mexicale Pie (which you can find in the recipe booklet here)

Tuesday’s Menu

Breakfast – Homemade Baked Doughnuts

Lunch – Chicken Patties from Trim Healthy Table

Dinner – Chicken and Dumplings (which you can find in the recipe book here)

Wednesday’s Menu

Breakfast – Homemade Granola

Lunch – Homemade Tomato Soup (Recipe below) and grilled Cheese

Dinner – Enchiladas (We use left over’s from Mexicale pie that we are having for dinner on Monday as our filling)

Thursday’s Menu

Breakfast – Eggs and Sausage

Lunch – Quesadillas and fruit

Dinner – Chili (which you can find in the recipe book here)

Week 3 Quarantine Menu & How We Spent the WeekHomemade Tomato Soup Recipe

Serves 6 – Adapted from a recipe from another Pastor’s wife

Ingredients:

4 C tomato Sauce

4 C Beef Broth

2 C Heavy Whipping Cream

1 T of Basil

1 T Oregano

Directions:

Heat the tomato sauce, beef broth and spices.  Once heated thoroughly add the cream.  Stir together and serve.

Can I just tell you that this is the best tomato soup that I have ever had in my life!!  It’s so amazing.  My mouth is watering just thinking about making it later this week.
