Gourmet Food Storage – Ah-Mazing 3 Ingredient Snack

I don’t know how many times I’ve mentioned that I HATE to cook.  Yea, I do it.  Yea, I’m good at it, but it’s one of those skills I’m thankful for to a point and not much beyond that.  So for me and consequently my family CONVENIENCE is the name of the game.  Even when I plan snacks, while there are some snacks that are SO YUMMY that I’ll make them once.  After that, I probably won’t because it’s too much effort, so the snack that I’m going to give you the recipe for today is super simple!  We’re going to make granola bars.

Now, I feel like I should issue a disclaimer at this point.  The recipe isn’t original to me, but I spent a lot of time looking for just the right recipe to share with you.  I had several criteria.  (1) It had to be SUPER SIMPLE!  (2) I needed to be able to make it with ingredients I already had on hand.  (3)  It needed to be no-bake or I needed to be able to make it even if we didn’t have power in the house.

Yes, there are granola bar recipes that abound on the internet.  Just do a search.  Your eyes will possibly pop with all the possibilities when looking for granola bars, but I found the perfect recipe!  Just 3 ingredients, so check off #1.  I already had all these ingredients on hand.  Check off #2.  It is no-bake, but it does require two ingredients to be heated on the stove.  I have a butane stove though, so I can still make it with no power.  Check #3!

Granola Bar Recipe

5 C oats

2 C natural, unsalted creamy peanut butter – I get mine from Aldi since it’s cheapest there.

1 C maple syrup

Directions:

1.) Line a 9×13 glass baking dish with parchment paper.

2.) Place oats in a bowl.

3.) Mix the peanut butter and maple syrup together.  I’d use a whisk.

4.) Heat it on the stove until the edges start to look bubbly.  Remove from heat immediately.

5.)  Pour over the oats and mix thoroughly.

6.) Pour this mixture into the 9×13 lined glass dish. Mush it down with a spatula or your hands until it looks even.

7.) Refrigerate for 2 hours.  Then cut.

I made these for my family, and they RAVED about them.  Even my non-peanut butter lovin’ girl loved them!  My 11-year-old son said, “If these were a little taller, I’d have you make them for my birthday cake.”  So prepared to be wow-ed!  These are amazing.
