So, If I say, “comfort food” what comes to mind for you? Is it pizza? Maybe it’s mashed potatoes or fried chicken. Or for some of you, it might be oozy, gooey, macaroni and cheese. I’m not talking about boxed, flat tasting macaroni and cheese. The kind I’m talking about is a dish that bursts with flavor and gooeyness from real cheese.
Did you know that such a thing was even possible using food storage? It isn’t just possible, but incredible and easily doable!
Ooey Gooey Cheese Sauce
1 recipe for evaporated milk
2 C cheese (You can use freeze dried cheese from your food storage for this. Just use 2 C rehydrated cheese)
2 T Arrowroot powder
2 tsp mustard powder
2 tsp hot sauce or 1/4 tsp cayenne pepper
Directions:
1.) Rehydrate cheese if using freeze dried.
2.) Mix cheese, mustard powder, and arrowroot powder
3.) Heat evaporated milk on the stove. Whisk the cheese mixture into the warm milk a little at a time.
4.) Continue to whisk and let thicken as it heats.
I wanted to say a couple of things about this recipe. If you don’t feel the absolute need to have ooey gooey cheese sauce and just ‘cheese sauce’ will do, then reduce the cheese to 1 C, the arrowroot powder to 1 T and the mustard powder to 1 tsp. Secondly, feel free to further flavor with salt and pepper. Usually, the mustard powder is enough, but sometimes, just a little salt and/or pepper adds just a little more flavor.
Macaroni and Cheese
If Macaroni and cheese is the ultimate comfort food for you, here is your comfort food heaven.
Directions:
1.) Boil about 5 C of water to 3 C of macaroni.
2.) Once the water is boiling, add macaroni and let cook until tender.
3.) Strain the water off of the macaroni.
4.) Return the macaroni to the pot in which it was cooked and pour your Ooey Gooey Cheese sauce over it.
5.) Eat with glee!
Variations on Macaroni and Cheese:
Sometimes Mac and Cheese is enough, but if you are making it often because of the price and ease, you might get a little bored with it. Here are some ways to spruce it up and change it up just a bit so it doesn’t get boring.
1.) Add one can of drained canned chicken.
2.) Steam some peas, corn, or green beans (or use a can of any of them) and add to the completed macaroni and cheese.
3.) Top with an additional half cup of cheese and flavored bread crumbs and bake at 350 degrees for 15 minutes.
