Mashed Potato Pancakes – Yields 12 pancakes
These are similar to latkes but are made with mashed potatoes, not hashbrowns.

Ingredients:
3 C leftover mashed potatoes, chilled
2/3 C shredded cheese
2 Tbsp chopped scallions, green and white parts
1 egg, lightly beaten
3 Tbsp all-purpose flour
1/2 C all-purpose
Vegetable oil, for pan frying
Sour cream (for serving)

Thanksgiving Leftover Casserole
This recipe is from Taste of Home.
Ingredients:
4 C seasoned stuffing cubes
4 C cubed cooked turkey
2 celery ribs, finely chopped
1 C frozen peas
1 C fresh or frozen cranberries
1/2 C chopped sweet onion
1/4 C all-purpose flour
4 large eggs
3 C 2% milk
1 can (8-1/4 ounces) cream-style corn
1/2 tsp salt
1/2 tsp pepper
2 Tbsp butter
1/3 C coarsely chopped pecans
Directions:
1.) Preheat oven to 350°. Layer the first 6 ingredients in a greased 13×9-in. baking dish. In a large bowl, whisk flour, eggs and milk until smooth. Add corn, salt and pepper; mix well. Pour over top; let stand 15 minutes. Dot with butter and sprinkle with pecans.
2.) Cover and bake 35 minutes. Uncover and bake 30-35 minutes or until a knife inserted in the center comes out clean.

Leftover Stuffing Muffins

We’re going to use this recipe this year, and can I just say, I’m SO looking forward to this as my homemade stuffing is my favorite part of the meal!
Ingredients:
2 tsp butter (for greasing the muffin tin)
3 C prepared stuffing or dressing
1 C chopped turkey or ham
1/4 lb. frozen spinach, thawed and squeezed
6 large eggs
2 Tbsp milk
1/4 tsp salt
1/4 tsp Freshly cracked pepper

Leftover Green Bean Casserole Potpie – Yields 8 servings
This recipe is from McCormick.
Ingredients:
1 package (14.1 ounces) refrigerated pie crusts, (2 crusts)
2 Tbsp butter
1 medium yellow onion, chopped
2 C shredded cooked turkey
2 C prepared green bean casserole
2/3 C prepared turkey gravy
1/2 C milk
Directions:
1.) Preheat oven to 425°F. Prepare pie crusts as directed on package for two-crust pie using 9-inch pie plate.
2.) Melt butter in large skillet on medium heat. Add onion; cook and stir 5 minutes or until softened. Stir in remaining ingredients. Season with salt and pepper to taste. Cook until heated through. Spoon filling into pastry-lined plate. Top with second crust. Seal edges and cut several slits on top.
3.) Bake 30 to 40 minutes or until crust is golden brown. Let stand 5 minutes before serving.

I make a 20+ lb. turkey every year for 6. The kids (all adults now) take what they want of the leftovers and then I package the rest of the food as TV dinners. They each couple ends up with 12 rolls and a pumpkin pie and a 9×12 foil pan with a lid full of leftovers. This year in our freezer, I have 8 TV dinners for later when we want Thanksgiving food again. Freezer cooking at its easiest!
